It’s when we welcome back hoards of tourists to experience the greatest snow on earth. But in the meantime, that doesn’t mean you still can’t enjoy the cool weather as you wait for the snow to fall…we want to hear your favorite autumn vacation travel ideas within the state!

Chocolate is for Lovers

Valentine’s Day is just around the corner, and thanks to our favorite Utah Caterer, Culinary Crafts, we have the most delicious Black Satin Fudge Cake recipe that is sure to knock the socks off your lover this Valentine’s Day. This decadent flourless chocolate cake can be served with fresh berries, a dollop of real whipped cream, or drizzed with caramel – or splurge with all three for a pure romantic indulgence! Black Satin Fudge Cake

6 large eggs
2/3 cup sugar
1 ½ cups butter
6 ½ ounces unsweetened baking chocolate
9 ½ ounces semi-sweet chocolate chips
4 teaspoons coffee extract
2/3 cup brown sugar
1/3 cup white corn syrup
2 tablespoons molasses

Whisk the eggs and sugar together at medium speed until mixture begins to thicken.

Over low heat, melt the butter in a sauce pan. Once melted, add the unsweetened chocolate and stir until melted. Turn off the heat and add the semi-sweet chocolate chips and stir until smooth.

In a saucepan over medium-low heat, cook brown sugar, corn syrup, and molasses to soft thread (210-215 degrees)

Add the egg mixture to the soft thread syrup. When mixed, add the chocolate mixture.

Spray a 12 inch spring form pan with baking spray, line the bottom of the pan with parchment paper and spray again. Pour the cake batter into the prepared pan.

Bake 30 minutes at 300 degrees. Turn the oven off, but let cake remain in the oven for an additional 30 minutes. Remove and let cool completely to room temperature.

Once cool, the cake can be frozen if desired.

Curt Bramble – Professional Pizza Eater

So Curt Bramble, the Majority Leader of the Utah Senate, ordered a pizza from a local pizza joint and didn’t understand their policy on not taking personal checks – no big deal, right?

Well, it wouldn’t have been if Curt hadn’t been so difficult about it, flaunted his title and money (he’s a public servant – what a waste) and happened to have flipped out on a pizza delivery girl who blogs.

Read her account of the story – I guarantee it will make you not want to vote for this guy.

Liberty Land chooses the wrong name

Anybody who has driven through American Fork on I-15 has probably noticed our own Mount Rushmore – pretty cool, huh?

I was baffled about what exactly what this place was until I finally noticed some water was running down the statue (a fountain) and I saw a roller coaster near it – it must be some kind of little amusement park. Pretty cool.

My problem, however, is that I can’t drive past “Liberty Land” without asking myself whether the owners really didn’t think of the most awesomest, obvious name – “Mt. Funmore.” I haven’t been yet, but I’m pretty sure if it was called Mt. Funmore I would go.

Gas Prices = Languish at the Pump

At least for me. But next time you’re filling up at the pump, angry at the world because those #@$#(%! oil companies keep jacking up the price of oil and thus bleeding you dry, take comfort in knowing that Utah has some of the lowest gas prices in the nation – fifth lowest, to be exact, with an average of $3.03 a gallon (as reported by AAA).

I know…it’s little consolation. “The Federal Trade Commission has ruled that oil companies are not gouging customers. They say, technically, they’re screwing customers.” Amen, David Letterman

Smartest Professors in Utah?

So I was trying to figure out if I should move back east to go to one of those prestigous Ivy league schools – then I realized I couldn’t get in (I’m not too smart).

So what did I do? What any self-respecting web-savvy seeker of truth would do – I turned to google. I did a search for “smartest professor ever” (with no quotes) and found that apparently, according to the all-knowing Google, the 2 smartest professors ever are both from Utah.

Why go out of state for an education? We got the smartest professor ever right here….

The World’s Best Bagger

The 2008 International Best Bagger is one of our very own. Erika Jensen, a bagger at a Macey’s super market in West Jordan, recently returned from Las Vegas after earning the title of “World Champion Bagger.”

Competitors were judged not only on how fast they could bag, but also weight distribution of the bags and dress and appearance. Erika’s sister Emily won the competition three years ago.

In addition to trophies, Erika was given a monetary prize of $2,000 to sweeten her big win. Congratulations to Erika!
